This new flavor blossomed from an inspiring collaboration with Shuggie’s, the food waste-fighting restaurant serving pizza, aka “trash pies,” bringing delicious, sustainable eats to the Mission District. Carrot Cake Extravaganza is doubling down on Shuggie’s mission to counter climate change by upcycling ingredients into exciting culinary creations.

David Murphy and Kayla Abe, the passionate duo behind Shuggie’s, first met at a farmers market, bonding over a shared mission to support local farmers. After their first venture to fight food waste, The Ugly Pickle Co., they started Shuggie’s—a climate-conscious restaurant redefining our food system by crafting exquisite dishes from an ever-changing variety of imperfect or surplus ingredients. Their beloved dessert, Carrot Toffee-Lemon-Lime Extravaganza, reflects this same dedication, adapting to the seasons by using a variety of root vegetables in lieu of carrots to keep it on the menu for their devoted guests.

The ethos of Shuggie’s is transforming imperfect ingredients into perfect bites—which is reflected in the creation of this flavor by blending our delightful ice cream with Shuggie’s innovative upcycled menu.

Carrot Cake Extravaganza with Upcycled Walnuts is an artfully deconstructed take on their carrot cake, crafted by Kris Hoogerhyde, Bi-Rite Creamery’s co-owner and pastry chef, and David and Kayla. At Bi-Rite Creamery, we used upcycled walnuts from Old Dog Farm and sweet dates to create the walnut butter ice cream. We added a pineapple jam swirl and then folded in housemade carrot cake pieces; the result is irresistible, spiced carrot cake goodness that honors Shuggie’s beloved sustainable dessert.
